Title: Salmon with Dill/mustard Sauce

Yield: 4 Servings

1/4cReduced-fat, cholesterol-
  Free mayonnaise dressing
2tbChopped fresh dill
2tbMilk
1tbDijon mustard
1 1/2lbSalmon fillet
1tbSalad oil
1/8tsSalt
1/8tsPepper

1. Preheat boiler if manufacturer directs. 2. Meanwhile, in small bowl, mix mayonnaise dressing, dill, milk and mustard. set aside 3. With tweezers, remove any small bones from salmon fillet. Cut salmon crosswise into 4 pieces. 4. Grease broiling rack. Place salmon pieces on rack skin-side down. Brush top of salmon with oil, sprinkle with salt and pepper. Broil salmon 5-7 inches from heat for about 8-10 minutes (depending on the thickness of the fillets), or until golden on top and fish flakes easily when tested with a fork. 5. Place salmon on 4 dinner plates; top with mustard sauce.

Each serving about 305 calories, 19g fat, 84 mg cholesterol, 310 mg sodium.
